Instructions
In a medium mixing bowl, combine the mascarpone cheese, heavy cream, granulated sugar, and vanilla extract. Using a hand mixer, beat the mixture on medium speed until soft peaks form. It should be thick and creamy, resembling the texture of whipped cream.
In a separate bowl, mix the cooled espresso with the Baileys Irish Cream (or your chosen non-alcoholic alternative). Stir gently until the two are fully combined, creating a smooth espresso blend.
Prepare your serving glasses or elegant martini glasses. Begin by pouring approximately 1-2 ounces of the espresso mixture into the bottom of each glass. This will act as the base layer.
Next, take a spoon or piping bag filled with the mascarpone cream mixture and dollop or pipe a generous layer over the espresso, filling each glass about halfway full.
Repeat the layering process: add another 1-2 ounces of the espresso mixture followed by another layer of the mascarpone cream until the glasses are nearly full, leaving a little space at the top for decoration.
To finish, liberally dust the top layer with cocoa powder for a beautiful contrast. Garnish each glass with a ladyfinger cookie standing upright on the rim, and sprinkle a few dark chocolate shavings on top for an elegant touch.
Notes
Serve each martini with a small spoon for easy enjoyment. For an added pop of color, consider garnishing with a fresh mint leaf placed delicately on top.
