Sprinkle the taco seasoning over the browned meat and pour in 2/3 cup of water. Stir well to evenly coat the meat and then allow it to simmer for about 5 minutes.
While the meat is simmering, take a large mixing bowl and combine the cooked white rice, drained black beans, corn, and diced tomatoes. Mix all the ingredients together thoroughly.
To assemble, layer the rice mixture at the bottom of serving bowls as a base.
Spoon the seasoned meat evenly over the rice mixture.
Generously sprinkle shredded cheddar cheese on top of the meat, allowing it to melt slightly from the heat.
Add a vibrant layer of shredded lettuce next, along with dollops of sour cream. If you like a bit of spice, add sliced jalapeños on top.
Finish off the bowl with a generous handful of crushed Doritos, spreading them evenly across the top.
Garnish each bowl with fresh cilantro for a burst of color and flavor.
