Instructions
Begin by preheating your oven to 400°F (200°C). For easy cleanup, line a large baking sheet with parchment paper.
In a spacious mixing bowl, combine the sliced sausage, broccoli florets, diced red and yellow bell peppers, sliced red onion, and halved baby potatoes.
Drizzle the extra virgin olive oil over the vegetable and sausage mixture. Add the smoked paprika, garlic powder, dried oregano, along with salt and pepper to taste. Using your hands or a spatula, toss the ingredients gently until every piece is evenly coated with oil and seasonings.
Transfer the mixed ingredients onto the prepared baking sheet, spreading them out into a single even layer.
Place the baking sheet in the preheated oven and roast for 25-30 minutes. Halfway through, stir the mixture to ensure even cooking and browning.
When finished, carefully remove the baking sheet from the oven. Allow the medley to cool for a few minutes.
Before serving, sprinkle with finely chopped fresh parsley to add a burst of color and freshness.
