Instructions
Make Watermelon Juice: Begin by carefully cutting a ripe watermelon into manageable chunks. Place the chunks in a blender and blend until completely smooth. Strain the blended mixture through a fine mesh sieve to collect 1 cup of clear watermelon juice, discarding the pulp. Set the juice aside for later use.
Prepare the Mochi Dough: In a large mixing bowl, combine the sweet rice flour, granulated sugar, and salt. Gradually pour in both the water and the freshly strained watermelon juice, stirring continuously until the mixture forms a smooth, lump-free batter.
Steam the Mixture: Transfer the mochi batter into a heatproof dish, spreading it evenly. Cover the dish with parchment paper to maintain moisture during steaming. Place the dish in a steamer over medium heat and steam for approximately 20-25 minutes, or until the dough has transformed into a translucent, slightly sticky texture.
Cool the Mochi: Once the steaming is complete, carefully remove the dish from the steamer and allow the mochi to cool for about 10 minutes. This will make it easier to handle.
Shape the Mochi Bites: Generously dust your work surface with cornstarch to prevent sticking. When the mochi has cooled enough to handle, transfer it to the prepared surface. Use a sharp knife to cut the mochi into 2-inch squares.
Fill the Mochi Bites: Take a square of mochi dough in your hand and gently flatten it using your palm. Place a small piece of fresh watermelon in the center. Bring the edges of the mochi up and around the filling, pinching to seal it well.
Dust and Finish: Roll each sealed mochi bite in cornstarch or potato starch to prevent them from sticking together. For an extra touch of flavor and texture, you can roll them in shredded coconut if desired.
Serve or Store: Place the mochi bites in an airtight container for storage. They can be enjoyed immediately or chilled in the refrigerator to serve as a refreshing dessert.
